Slow Cooker Sesame Chicken Thighs

This flavorful recipe requires NO prep work, chopping, etc., can be prepared the night before, and put in your slow cooker as you leave for work in the morning.

6 boneless, skinless chicken thighs
4 Tbsp sesame seeds
1/2 c honey
1/2 cup soy sauce (we prefer low-sodium soy sauce, like this Kikkoman product)
1/2 c ketchup (we used Simply Heinz, which has no high fructose corn syrup)
4 cloves garlic, minced (we used Polaner’s chopped garlic to save on chopping and cleanup)
1 Tbsp canola oil
pinch of red pepper flakes (to taste; less if kids, more if you like it hot)
Scallions (sliced) for serving

  1. Combine all ingredients in the slow cooker, making sure chicken is coated.  Cover and cook on low for 4 hours.
  2. Shred chicken and mix with sauce before serving.   If you want a thicker sauce, after shredding, add a mixture of 2 Tbsp cornstarch with 1/4 cup water.  Cover and cook on high for 15 minutes.

You can serve over brown rice, with broccoli, etc.
