Butternut Squash Noodle Taco Bowl

Enjoy a guilt free dinenr with this easy recipe for a Butternut Squash Noodle Taco Bowl.  From healthy noodles to fresh veggies this meal is both filling and delicious!  Try it and let us know what you think. 


  • 1 pkg. King Kullen Butternut Squash Veggie Noodles (Any veggie noodles will work – sweet potato, carrot, zucchini and beets are also available)
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1 tsp taco seasoning
  • 1/2 cup salsa
  • 1/2 can black beans
  • 1 cup corn
  • 1/2 cup shredded cheese
  • Hot pepper (optional) 


  1. Preheat pan on medium heat and drizzle oil. Add King Kullen Butternut Squash Noodles and salt. Cover noodles and cook for about 10-15 minutes or until noodles are tender.
  2. Stir in taco seasoning and salsa. Add black beans and corn, stirring. Sprinkle with shredded cheese, cover and cook for about 5-10 minutes.
  3. Serve with your favorite toppings.  Avocado, sour cream or Greek yogurt, sriracha and salsa are just a few of our favorites.
