• Keep raw meats separated from cooked foods, as well as fresh fruit and vegetables.
• Use a meat thermometer to ensure that you have cooked your meat to the proper temperature.
• Trim excess fat from your meet before grilling to reduce the risk of flare-ups.
• Add sauces at the end of grilling to prevent burning

Don’t forget that all meats continue to cook even after they are removed from heat.  You may want to pull it off a few minutes before the meat has reached its desired “doneness,” as the meat will still cook in the time it takes to serve.
